Entertaining with Wine? Keep it simple with these stress-busting tips

The holidays are here. Whether you’re entertaining a small group from work, a family Christmas feast, or a New Year’s Eve Party, there’s always one thing you can count on—that stressful trip to the wine shop. Will my guests like it? What if this wine goes with the appetizer and not with the main dish? How much should I buy? How should I serve it? By the time you’ve finished debating, you’ve just lost an hour in the wine aisle you could have been using to cook.

The good news is, you don’t need your own personal wine sommelier to choose the right wine with your holiday meal. According to wine experts, if you go for the lighter, fruitier wines, you’ll make the right choice nearly every time.

“Light, fruity wines like Rieslings are the all-purpose holiday drink,” said Christopher Klau, president of Schmitt Sohne USA, distributors of nearly 50 percent of all Riesling wines sold in the U.S. “The key is their acidity. They are light and easy to drink, so even people who don’t drink wine often will still enjoy the taste.”

When it comes to entertaining simply with wine, Klau recommended a few tricks of the trade that can make your event go more smoothly:

Serve lighter, dryer style wines first—Fuller bodied and more robust wines last. Wines should complement food, not become the primary focus. And most appetizers and first courses are lighter than the main course. A good rule of thumb is to serve a Riesling Cabinet with finger foods, soups and salads. Riesling Qualistatwein (QBA) and Spatlese will go well with the most typical holiday main courses, such as turkey, ham, pork roast and tenderloins. They will compliment the foods flavor while not masking their taste. The balance of acid to sugar in German Rieslings is what gives them their perfect food pairing ability. From fruits and cheeses to roasts and elegant desserts, you can find a German Riesling that will perfectly complement the taste.

Have Enough on Hand—When it comes to holiday entertaining, it’s not necessary to offer guests a wide variety of wine choices. Simply count the number of guests, and buy one bottle for every two guests, per course.

Good wine doesn’t have to be expensive—Good Rieslings come in every price range, a factor that has helped explain why Rieslings are one of the fastest growing, top selling wines available today. Bottles of the Schimitt Sohne “Little German” branded Rieslings go for as little as $ 6.99 a bottle, and are widely available wherever wines are sold. To chill or not to chill– Confused by all the talk about airing out wine and all the fancy wine chillers out there? The bottom line is, most light, fruity wines like Rieslings should be chilled to truly appreciate their crispness. You do not need to remove the cork and air it out in advance. Chilling the wine glasses is not necessary. If you’re having a sit-down dinner, chill your wine at least an hour in advance and pour it at the table. If you are having a buffet where guests mingle for an extended period, chill your wine in advance and display the bottles in ice buckets that are easy for your guests to access.

Wine with dessert? Why not? As an alternative to coffee, wine makes a great choice to go with everything from cake to bread pudding. And it’s not necessary to buy a $ 30 bottle of expensive dessert wine. “Just choose a heavy bodied Riesling, like an Auslese, which is made from overripe grapes picked late in the harvest. You’ll be surprised how well a full-flavored wine can bring out the sweetness and flavor of a rich dessert,” Klau said.

Pacing is everything—Whenever you serve alcohol, pacing is key to making sure your guests don’t overindulge. Make sure that your wine and cocktails course is accompanied by plenty of appetizers, and that it doesn’t last for more than 40 minutes to an hour. During a meal, make sure there aren’t too many long gaps between courses, and that there are pitchers of water or other non-alcoholic beverages like mulled cider or spiced tea on the table, to help guests pace themselves. During a cocktail party, have lots of heavier foods and plenty of “spotters” to make sure your guests are getting the soft drinks and food they need.

For a more personal touch you can make your own box of chocolates to give to your valentine. Don’t worry if you are not a whiz in the kitchen – even if your gift does not turn out perfectly, it will earn extra points because you made it especially for them. There are many books, magazines, and websites to turn to for help and guidance so you do not have to go it alone. The Shape of Love

While hearts are often a common theme used for shaping chocolates and gift boxes, you can use any shape that would appeal to your valentine, such as flowers. You can be creative with cookie cutters, stencils, or decorator’s icing to give your chocolates extra flair, such as drawing a heart, smiley face, or bow on your chocolates. Also consider the different ways you can dress up the gift box with ribbons, flowers, handwritten love poems, etc.

Milk Chocolate Is Not the Only Chocolate Out There

While most Americans favor milk chocolates, don’t be afraid of using dark chocolate in your gift; for instance, you can do a mixed selection of 1/2 milk chocolate and 1/2 dark chocolate. If you are not sure if your valentine likes dark chocolate you might want to go for the mild and sweet taste of semisweet chocolate. In a small bowl, heat cream in microwave until it just starts to boil. Mix in half the chocolate, continue to add chocolate until it is very thick like molasses. Using a butter knife, spread the chocolate on the inside of two martini glasses (7-8oz glasses). Set in freezer.

In a martini shaker, add ice, Godiva, Banana Crème, Vodka, tiny pinch of nutmeg, shake (remember to double alcohol for 2 maritinis). Pour half in each chocolate glass. Top off glass with crème soda, add marshmallows for garnish.

Almost time to break out the mini barbecue and hit the outdoors for one of our favorite American past-times – picnicking.

But before you pack up the picnic basket and head out, there are some important precautions you should take to prevent a food-borne illness from ruining your outdoor festivities.

Chicago corporate catering firm, Sun + Moon Catering, shares these tips:

1. Wash your hands often. When preparing a variety of foods at the same time, it’s important not to pass bacteria from one food to another with your hands. Washing your hands with warm soapy water before preparing foods and after handling raw meats will significantly lower the risk of food-borne illness.

2. Wash fruits and vegetables well. Use a vegetable brush and plenty of water.

3. Keep raw meats and ready-to-eat foods separate. Cross contamination occurs when juices from raw meats accidentally touch cooked or ready-to-eat foods. Make sure to use two separate cutting boards; one for raw meat, and another for fruits and vegetables.

4. Make mine well. Whether you like your steak rare or not, it is very important to cook large cuts of meat all the way through. A little pink in the center is okay, but check with a food thermometer to make sure the meat’s internal temperature is in the safe zone. When barbecuing poultry or seafood, always make sure the meat is cooked throughout.

5. Throw away used marinade or basting liquid. Don’t serve it with a cooked dish. Make extra marinade if you plan to serve it as a sauce.

6. Never use the same plate twice. Plates that have had raw meats on them should always be washed immediately. Never use the same plate once the meat has been cooked.

7. Keep hot food hot, and cold food cold. Particularly when you’re enjoying dishes such as potato salad, make sure it stays chilled throughout the day. Hot foods, like steak, chicken or hot dogs should be kept covered in foil to retain heat.

8. Keep melons out of the “Danger Zone. Melons can pose a risk for foodborne illness if not prepared or stored properly. Before cutting into a melon, wash the outer surface with water thoroughly to remove surface dirt – even if the melon looks clean! Once a melon has been cut, you must keep it chilled in ice or refrigerated at 40 degrees or less. Cut melons can be served without refrigeration for a maximum of two hours.

9. Safety on the side. Never keep side food items out for longer than two hours, especially those that are prepared with mayonnaise or are considered high in protein. Bacteria can multiply in moist foods such as pasta, noodles, rice, salad and dessert. Keep cold side dishes properly chilled and away from the sun at all times.

10. Careful with the leftovers. Don’t be tempted to save the leftovers — especially foods that have been left out for hours.

However, if a patient’s knees become sore with walking; bicycling, arm exercises or walking in a pool can also be beneficial.

2. Balance exercises. Tai Chi and water aerobics are types of balance exercises that can be effective without adding much pressure to joints. But, take it easy. If joints hurt after exercising, they were probably overexerted. If the pain persists over the next few days, a physician should be consulted.

3. Weight control. Every ten pounds of weight gained is equal to 30 pounds of pressure on the knees. Thus, losing ten pounds is the same as removing 30 pounds of pressure on a patient’s knees.

4. Heat/cold. Using ice packs can reduce acute pain while heat loosens joints and increases blood flow. Try sitting in a whirlpool before exercising and icing an irritated spot after exercising to provide soothing relief.

5. Attitude/education. It is important to have a positive attitude when living with arthritis. In addition, sufferers should educate themselves as much as possible regarding their condition. Learn about new developments, read up-to-date materials and ask questions of health experts or a personal physician.

6. Assistive devices. Anything that makes completing a daily task easier is considered an assistive device. These devices can help to reduce discomfort and disability. In addition, they can also help people with arthritis become more functional by reducing their dependence upon others. For example, the Foot Funnel, a modern day type of shoe horn, is an assistive device that Dr. Reich recommends for those patients who have difficulty putting on their shoes.
